A cheese is only as good as its milk.

So we start in the barn. For twenty-five years we have raised Mediterranean water buffalo between the Cilento hills and the sea. We know every animal, grow its feed and generate much of the power it takes to milk it.

From 2027, that milk will have one destination: Milk from our own buffalo, made into cheese in our own dairy.

The buffalo

Around 500 Mediterranean water buffalo raised on our own farm, each one followed individually — health, wellbeing and every milking.

Buffalo-milk mozzarella and buffalo cheeses that, from 2027, will be made in our own dairy from our own herd. A short supply chain, with the name of the people who raise the buffalo on the label.
